Introduction:
The chicken biriyani name itself started to mouth watering. This recipe basically prepared by Muslim
which is too tasty. They are the one who expert to prepared this recipe. First time when i prepared
didn't come out well but after repeating two time then i learnt how to prepared this recipe. Now I am
preparing very well with good taste.this is layered type of biriyani recipe .it will take lot of effort but it
worth to do it.this is very tasty how many time i have prepared but always I feel that first time
only i am eating this recipe that much love for this recipe.
First fry onions (make it red - cut onion into slice) that is required while making layer so fry it & kept aside
Ingredients
For marinating
• 1 kg chicken
• I small cup Curd as per required
• 1 table spoon of cumin powder, coriander powder, turmeric powder & red chilli powder
garam masala powder
• 1 big inch Ginger & 10-15 medium sized garlic paste
• 1 small cup (Coriander leaves , mint leaves) ,5-6 green chilies
• Salt as per taste
Keep above marination in the fridge for 1 hour
For masala preparation : 6-7 onion gravy , 5 medium tomato gravy , 1/2 table spoon
garlic paste(take it from above ingredient) ,
Paste of coriander leaves , ginger and green chilli(take it from above ingredient)
Steps for preparation
• First place pot on a gas and add oil into it then add garlic paste once it leaves aroma then add mix
paste(coriander , ginger with green chilli)
• Once it leaves the aroma then add onion gravy make it fry till properly then add tomato gravy make it
fry till properly then add marination
• Left the pot till chicken fry then taste whether as per that is spicy if it is not then add red chilli powder
as per your requirement
• Remember that that gravy should be thick otherwise not possible to make chicken biriyani. If you
want to make more gravy thick then add
• Kaju kani paste (for that first u put some kaju kani in the water for soaking ) after 1/2 hour grind it in
the mixture then add that into chicken masala for gravy let it cook for 15 minutes then switched off the
gas here chicken masala ready
Basmati rice preparation
• Take 1 kg basmati rice and washed it or u can soaked in the water for 1/2 hour -(soaking in the water
rice makes rice soft and cooked fast)
• As per your choice then placed pot on a gas then add 1 liter water into it let it boil then add 1/2 table
spoon turmeric powder
• Garam masala like cinnamon stick , cloves of cardamom, black pepper , bay leaves all that once it
leaves nice aroma then put basmati rice
• Make sure on high flame it will take 5-7 minute to cook 70% and on low flame it will take 12 minutes
so keep on observing while cooking
Once it is 70% done just put in the whole type of pot where rice water will go only rice will there just
kept under the fan so that it will dry then prepare the layer
Preparation of layer
• First take big pot (in that fit chicken & rice together) in that first on below add oil or ghee as per your
choice
• Then add one layer of rice on top add sprinkle food color along with sprinkle kevda water and add
some fried onion and some oil then
• Add chicken masala repeat step 3 times and at least on top close with rice layer add (same kevda, food
color and ghee or oil , fried onion will give nice aroma) the close the big pot. turn on the gas and
placed a tawa on that then keep big pot on the tawa let it gas on high flame that's why we placed tawa
on it & let it cook for 15 minutes then your chicken biriyani ready.
